We love to talk about how dedication and passion shape the growth of our company, passing down the art of knowledge through generations.Transforming a treasure like the olive to obtain our precious "green gold" and bringing it to your tables requires specialcare during the entire production process: from harvesting, through the malaxers to the separators in the oil mill, and finally to storage; each phase requires meticulous attention.
Cold "pressing"
It is not just a common wording but certifies a high quality product. The temperatures at each stage are important because they can negatively affect the oil. Is very important for us: this phase is fundamental, as the malaxer has the task of mixing the oily paste to facilitate the separation of the liquid part, which includes oil and water. The separation subsequently occurs via a decanter(centrifuge) and separators, producing the oilready for storage.
